3 small carrots (peeled)
1 small white onion (finely sliced)
1 tablespoon Sugar
2 teaspoon salt
125ml vinegar
3 teaspoon Fish Sauce

 450g baby carrots
2 tablespoons butter
⅓cup brown sugar
1 cup water
salt
ground pepper

Combine the baby carrots with all other ingredients in a medium saucepan. Bring to a boil over high heat, stirring well. Reduce the heat to medium and boil uncovered for 20 more minutes, or until carrots are tender and the liquid has evaporated.
