Carrot Salad

This carrot recipe will sort you for the healthy lunch and contributes to your 5 A Day too.

  • 1kg carrots (peeled and grated)
  • zest and juice of 1 lime
  • 4 tablespoon sweet chilli sauce
  • 1 teaspoon fish sauce
  • ginger root (peeled and grated)
  • mint leaf (shredded)

Mix together the grated carrots, lime juice, zest, sweet chilli sauce, fish sauce, grated ginger and chopped mint and serve as an accompaniment to barbecued meats and fish or on its own.
